This is Jean-Georges Vongerichten’s steakhouse, tucked into ARIA’s second level promenade next to Bardot. The room is refined without feeling stiff, and it is one of the rare Strip steakhouses where you are not shouting over the table next to you. That makes it a strong pick for a birthday dinner where the conversation matters as much as the food.

Wagyu, Seafood, and a Souffle Worth the Wait

The steaks are the headline, from F1 Wagyu to A5 Certified Kobe Beef, with tableside carvery options like the Wagyu Tomahawk Ribeye. On the seafood side, the Chilean sea bass and Tristan lobster tail both hold their own against the beef program. For the birthday moment, ask for the salted caramel souffle right when you sit down since it is made to order and takes time.

Dress is business casual. Ball caps are not permitted in the main dining room. Reservations are strongly recommended, especially on weekends and during peak hours, so book ahead for a birthday night.
