Echo & Rig is my go-to answer whenever someone asks for a great steak dinner that is not on the Strip. It sits in Tivoli Village on Rampart, a short drive from Summerlin, with an actual butcher counter built into the restaurant. I love that you can watch the meat get cut before it lands on your table. For a birthday dinner without the Strip crowds and parking, this is where I send people.

The Vibe

It is a two-story space with a full bar near the entrance, a working butcher counter, and dining upstairs with a balcony overlooking Tivoli Village. It feels approachable rather than formal, which makes it easy for a mixed group to feel comfortable, whether you came from work or came straight from the pool.

What to Order

This is a serious cut-focused steakhouse, using top-tier beef sourced from suppliers like Cape Grim and Creekstone Farms. The wood-fired octopus and the black spaghetti with lobster are both worth a look if you want to start with something different before the steak arrives.

The birthday move: the roasted bone marrow is a favorite starter here and a great way to kick off a celebration dinner with the table sharing.

Hours: Open daily for lunch and dinner with a separate weekend brunch service. Hours shift across lunch, happy hour, and dinner, so it is worth a quick check before you head over.

Dress code: Upscale casual, no jacket required. Jeans are fine, just skip the beachwear and athletic gear.

Reservations: Recommended, especially for dinner on weekends. Book through OpenTable or call (702) 489-3525. Complimentary valet is available.
