Carson building on Fremont East, and it manages to feel playful and polished at the same time. It is one of my favorite birthday dinner picks for anyone who wants downtown character without giving up a great meal.

The Vibe
Historic building, rooftop views, downtown energy
Carson Kitchen occupies the historic John E. Carson building at 6th and Carson, right in the Fremont East entertainment district. Between the exposed brick, the open kitchen, and the rooftop patio, it captures downtown’s character better than almost anywhere else on this list.
What to Order
Bacon jam and crispy chicken skins are the staples
The bacon jam flatbread and the crispy chicken skins are the dishes people talk about most, and both are a great way to start the table off right. From there, the menu leans into clever, elevated comfort food that is easy to share.

Hours: Monday through Thursday and Sunday, 11:30 a.m. to 10:00 p.m.; Friday and Saturday, 11:30 a.m. to 11:00 p.m.
Reservations: Recommended for the rooftop, especially around sunset and on weekends.
My tip: Book the rooftop at sunset if the weather cooperates. It is one of the best golden-hour views downtown has to offer.
