Jose Andres brought his playful, theatrical meat palace to a brand new room on the Strip, and it is a birthday dinner unlike anything else in town.
Bazaar Meat moved from the Sahara to The Venetian in the fall of 2025, and I will admit I was nervous the new room would lose some of the magic. It did not. If anything the space fits the food better now, and it is one of the few restaurants in Las Vegas where dinner genuinely feels like a show. I send birthday groups here when they want to be surprised, not just fed.

Theatrical, playful, built to impress
The new space sits on the lower level of the Palazzo Tower lobby at The Venetian, a 20,000 square foot room inspired by a Spanish equestrian festival, with a main dining room, a bar and lounge, private dining rooms, and a covered terrace. Tableside carving, flaming dishes, and servers who genuinely enjoy the theater of it all make this one of the most fun rooms on the Strip for a group celebration.
Say yes to the theater
The cotton candy foie gras is still the dish everyone talks about, and it belongs on every table. Add the caviar cones, live scallop ceviche, and the beef tenderloin Rossini, then let the kitchen carve and finish dishes tableside. Bring adventurous eaters if you can. This is not a menu built for playing it safe.
The birthday move: Sphere Graffiti, a chocolate dome dessert you crack open with a mallet to reveal sweets inside. It is a genuine showstopper at the table and about as good as birthday theater gets.

Hours: 5 to 11 p.m. daily.
Dress code: No strict dress code, but most guests dress upscale casual and dress it up a bit for a celebration.
Reservations: Strongly recommended, especially on weekends. Book through SevenRooms and call (702) 607-6328 with any special requests.
