A few names from older lists are gone: CarneVino at Palazzo, Craftsteak at MGM Grand, the Camelot Steakhouse at Excalibur, and the steakhouses inside the now-demolished Fiesta Henderson and Texas Station. Smith & Wollensky did not close, it moved from its freestanding Strip building to the Grand Canal Shoppes at The Venetian.

A spread of big-night Strip rooms, a couple of downtown classics, and the locals’ spots I actually go back to. Reservations are smart at all of them, and hours move around, so confirm before you go.
SW Steakhouse
My top all-around pick. Excellent steaks and a patio over the Lake of Dreams with a light-and-water show through dinner. Splurge-worthy and one of the prettiest tables in town.
Gordon Ramsay Steak
A theatrical, Union-Jack-tunneled room with a strong beef Wellington and a lively scene. The most fun of the celebrity-chef steakhouses, and great for a group.
StripSteak by Michael Mina
Known for butter-poached cuts and a serious steak program in a sleek room. A reliably excellent choice on the south end of the Strip.
Delmonico Steakhouse
Emeril Lagasse’s steakhouse with a New Orleans accent and a huge wine list. A longtime favorite that still brings it, and home to a great bone-in ribeye.
CUT by Wolfgang Puck
A modern, polished steakhouse from Wolfgang Puck with top-grade beef and a see-and-be-seen bar scene. A dependable special-occasion pick.
Jean Georges Steakhouse
Jean-Georges Vongerichten’s refined take on the steakhouse at Aria, with elevated sides and a sleek modern room. Quietly one of the best on the Strip.
